Asian Brine: Combines cinnamon, star anise, and Sichuan peppercorns to create a flavor of the Orient. Makes 1-2 quarts of brine per pack. Contains two packs.
Pour the contents of one envelope into a large, deep mixing bowl and add four cups of cold water. Stir until the salt and sugar crystals are dissolved. You can also add 1/4 cup optional bourbon, rum, wine or other alcohol. Add the food to brined and marinate in the refrigerator, following the brining time on the chart included in the kit.
Cook using your favorite grilling method - direct or indirect grilling or smoking. For even more complex flavor, smoke protein using the Best of Barbecue smoking wood chips.
